Crustless Apple Pie/Cobbler

This apple pie is so easy to make, but I usually call it cobbler as this is what it reminds me of with the soft crust. I made an apple and a peach one for Thanksgiving this year.

Thanksgiving Dressing

Excuse the picture, forgot to take one on Thanksgiving day, so scoped out some leftovers for a picture. Hopefully it give you an idea. Anyway, I have used this for the past two years and no one ever notices its GF/DF. If you are using a 9x9 pan, this recipe is perfect. If you are using a larger pan, you may need to double the recipe. I make my own cornbread and GF bread (recipes on this blog) the day before so that everything is ready to put together. I have also used fresh vs dried thyme, sage and marjoram and it turned out just as good.

Homemade Cornbread

This cornbread was used in my Thanksgiving dressing this year, which turned out great. A few hints, reverse the amounts of flour vs cornmeal. Cornbread should be made with more corn, so I switched the amounts and used 2 2/3 cup cornmeal and 1 1/3 cup of all purposed GF flour.


Mashed Maple Sweet Potatoes

I made a few changes to the recipe below and it turned out great for Thanksgiving this year. For a richer flavor, you can also add 2 tbls of the homemade whip cream (on this blog) when you add in the non-dairy butter. I did this for mine and it was fantastic.

Fried Rice with Chicken

Here is another family favorite. Fried rice with Chicken.

We use Jasmine rice (gluten free) and cooked it according to the instructions before adding with the rest of the ingredients. Instead of Soy Sauce (which has gluten, we used Tamari sauce-make sure the kind you use is GF). Depending on the size of chicken breasts your using, you may need 3, ours were large and only used 2 this time around. Sorry about all the markings below, but my speciality is taking regular recipes people like to eat and making them gluten free, dairy free and without any refined sugars. Hope you enjoy this one!

Family Dinner Favorite - Balsamic Garlic Chicken

Here is one of our favorite things to eat for dinner. Try it and let me know what you think. Please notice the modifications to make this gluten free/dairy free. Also the sauce is trippeled because we like a lot of sauce at our house :o)


Hot Chocolate and Whipped Cream

Hot chocolate with whipped cream anyone? It's getting cold outside...

Please see the attatched recipies:
1) I used coconut milk for the hot chocloate
2) For the cream, i used full fat coconut milk (in the can) and used the solid part at the cream.
3) I sprinkled cinnamon on top :o)
